Harvest: by hand with selection of the best bunches
Vinification: vinification in cement tanks where the fermenting must comes into contact with the skins through frequent pumping over and punching down, extracting the colouring substances and aromas. At the end of fermentation the wine is transferred to barriques where it matures and remains for a period of 15 months.
Aging: for at least six months in the bottle
Organoleptic notes: ruby red in colour. Fruity with delicate spicy notes and pleasant toasted, soft and balanced with good persistence.
Pairing: substantial first courses, medium-aged and fresh cheeses.
