Harvest: by hand with selection of the best bunches
Vinification: vinification in cement tanks where the fermenting must comes into contact with the skins through frequent pumping over and punching down, extracting the colouring substances and aromas. At the end of fermentation, the wine is transferred to barriques where it matures and remains for a period of 12 months.
Aging: for at least six months in the bottle.
Organoleptic notes: lively, clear and brilliant ruby color. Varied and delicate bouquet. It opens with notes of blueberry, blackberry and undergrowth leaves and closes with a delicate spiciness reminiscent of pepper. Fine tannin and dynamic acidity.
Pairing: roast in general, semi-mature cheeses.
